Meatless Meatless Meatless

So March is over, Lent is officially over, but after spending 40 days meatless, Brad and I have decided we LOVE it.  I personally feel that I'm never sickly full, am more than satisfied, and never have to worry about where my food is coming from.  (Did anyone hear about pink slime?!?!?!  EW!)  So, while we're not meat free, we are meatless.  We will eat meat when someone is cooking it for us, we will eat meat if it comes direct from the source (i.e.  a friend's grass-fed cow, Grandpa's lamb, etc), and we will eat fish (I couldn't fathom giving that up!).

So...what have we been eating?

The absolute best has been Vegetarian Times's Sweet Potato Black Bean Enchiladas.  We seriously can not get enough of these!

Sweet Potato & Black Bean Enchiladas

Lentils are surprisingly quite delicious especially in this lentil casserole.

Quinoa is so versatile like in this Roasted Broccoli Salad

Eggs are always a good bet such as in this super easy frittata (I added a can of drained Rotel once and it was AMAZING)

Portabella Mushroom Lasagna Rolls were delicious (but time consuming)

Peanutbutter Noodles are a definite go-to (this sauce is delicious as a dipping sauce for tuna too)

And what about tofu you ask?  Well, it's not a favorite around here, but I did make Tofu Parmigana and it was "edible."

If you are trying to go meatless, I'd save tofu for the pros and try some of  these other recipes I've given you.  I promise you won't be disappointed with any of them!

Easter 2012

We started our morning in Time Out for throwing toothbrushes...

...we took pictures before church...

...and after...

...we opened Easter Baskets and rode our new bike...

...we found a puddle and rocks.

Hope you had a Blessed Day!
